Easter Egg Hunt!!!
It is April and I can't even begin to figure out where the last 8 months have gone. Yes it has been that long since I have posted. I supose taking a full time job didn't help, so now that I am cutting back again I can take a few minutes to post. Noah and Adrienne are just so much fun. Saturday we did an Easter Egg hunt at the park right out our back door and Noah was so cute to help his little sister find eggs and count them. He is such a good kid, and she is a hoot. Actually it is funny I say that because her room is decorated in owls. So we are having fun. Noah is a little lego fanatic, he could spend hours upon hours doing lego sets He is pretty good at it for a 4 year old. I think he can out do me and I have a lego problem if the big boxes come out. Adrienne is just a sweetheart, she is already a Daddy's girl. I am sure that will chane in time so I am going to enjoy the freedom for a little. Adrienne is actually making through daycare at church finally so Kris and I have enjoyed getting to go to service. So we were able to attend service and worship on Easter Sunday.
I have had a growing passion about baking and cooking lately. I think most of my friends know that my goal in life is to own my own cafe/bakery. I absoluelty love to be in the kitchen. It is actually pretty amazing I am not overweight. Anyways I have decided that I am going to start sharing my creations, cause why else bake if other people can't enjoy them. Acutally I just promised my sister Shelly some recipes and I haven't gotten them to her yet. So I will post them. So the first one is my Granola recipe.
About 6 cups oats ( I use use Quaker oats)
1/3 cup oil
1/2 cup brown sugar
1/2 cup brown sugar
1/2 cup Almond butter(or peanut butter or cashew butter ....)
1/2 cup honey
1 1/2 teaspoon vanilla
2 teaspoons cinnamon
Almond or Pecans( how ever much you want 1 or 2 cups)
Combine all the dry ingredents. On the stove top combine all the other ingredents with medium heat. Mix them all together, then spread mixture in a shallow pan. You can cover the pan with foil which makes for an easy clean up. Then cook at 350 degrees for 45-50 min, just make sure you check on it every 10 minutes and mix it around so that the edges don't burn.
So there you go. Yummy Granola.
Racing season is just starting we have a few plans for the year In 3 weeks we are heading to Las Vegas for the XTERRA West Championships. I honestly just hope that I don't have a panic attack in the water like the last one. Why do we torture ourselves.??? I am pretty excited though. I am riding for Vanderkitten again this year, am riding a Ibis Mojo SL. Such a sweet bike, I think I could turn into a permenant Super D'er. So smooth decending, it actually climbs amazingly well. I was quit shocked. I raced it 2 weekends ago and felt pretty fast on the climbs.
Today I rode my Mojo while Noah was a Montessori. I rode into Deep Creek which was a blast. It started snowing, then raining, and then I got to this field of purple wild flowers and stoped for a second and the sun came out of now where. So I had myself a moment of peace and serenitiy. Beautiful!!! So just another reason I love the fat tires. You can go places that most people will never see.
